This recipe is inspired by the traditional Vietnamese Fried Spring Rolls. They are usually filled with shrimp and pork and all the stuff that you will never find in my kitchen:) These 15 Minute Fried Spring Rolls are filled with well-seasoned chicken breast and fresh herbs, and spinach. The perfect alternative if you ask me.

The options of dipping sauce ideas here are endless. I went with a cilantro lime dip for this recipe but a quick peanut sauce would be great, or a spicy garlic-y chili sauce.
I hope this recipe gives you the inspiration to come up with fillings and sauces that you and your family enjoy. If you have kids at home then this recipe is a great one for them to help with.
Spicy sesame noodles would make a great side dish for this recipe. A greens salad or rice would work great as well.
INGREDIENTS FOR 15 MINUTE FRIED SPRING ROLLS
- 1 lbs chicken breast/chicken thighs (made about 7 spring rolls)
- Oil
- Rice paper
- 2 cups of fresh spinach
- Salt & Pepper
- Cilantro
- juice from 2 limes
- 1 clove garlic, grated
- Water to thin out for desired consistency
- 1 heaping tablespoon of mayonaise
- 3 Tablepsoons olive oil
PROCESS
- Begin by prepping your chicken. Cut into strips or small chunks and season both sides with salt and pepper.
- Heat up about a tablespoon of oil over medium-high heat.
- Fry each piece of chicken until browned, about 5 minutes on each side.
- Once the chicken is done, put them on a plate and set them aside.
- Saute the spinach and season with salt. Set aside.
Now you can begin to assemble the spring rolls
- Place 1 sheet of rice paper under some water to help soften it up.
- Place some of the chicken, herbs, and spinach near one edge of the rice paper. Fold the paper over the filling. tuck in the sides and continue to roll to the end of the sheet.
- Repeat this until your chicken and spinach are finished.
- Heat up about 2-3 tablespoons of oil over medium-high heat. Fry each roll, for about 2-3 minutes on each side until golden brown and crispy.
- Remove from oil and let it drain on a wire rack or paper towel.
For the cilantro-lime sauce
- In a small bowl, place your mayonnaise, olive oil, grated garlic, juice from the lime, salt, and pepper and mix until combined, Add in chopped cilantro. Mix again. Add in 1 tsp of water internittentlly for desired consistency.
