Summer is here and it’s popsicle time baby! These Dragon fruit creamsicles are sweet, creamy, and will definitely cool you down. Did I mention they’re super easy to make? Only 5 simple ingredients.
Popsicles are kind of nostalgic for me. As a teenager, my dad used to take me for a ride and pick up a popsicle. Usually one of the ones with chunks of fruit in them. What a simpler time when sweet and simple outings become precious moments.
INGREDIENTS
2 cups of frozen dragon fruit. I found some at Costco.
1/2 cup water
1-14 oz can of coconut cream
3 tablespoons of agave, divided
pinch of salt
INSTUCTIONS FOR DRAGON FRUIT CREAMSICLES
- Puree the dragon fruit, 1 tablespoon of agave, and 1/2 cup of water in a blender to get a smooth and thin consistency. Set aside.
- Mix coconut cream, the remainder of agave, and salt in a blender or by hand.
- Spoon a little bit of dragon fruit puree into the bottom of your mold. Then spoon in a little bit of the coconut cream mixture. Continue to layer until your mold is filled to the top. Place in the freezer for several hours or until hard.
VARIATIONS
There are so many different ways you can make these delicious popsicles. Here are just a few:
- You can use any fruit you’d like, frozen or fresh. Orange would obviously be great for making the classic orange creamsicle. Lime would be delicious as well.
- You can use heavy cream if you’re not into the whole coconut milk thing.
- Any sweetener would work great. I had agave on hand so I used that. Sugar or maple syrup would also work.
- The cream to fruit ratio is up to you. If you like more creamy and less fruit, add in less of the frozen fruit and more cream. Obviously 🙂
