Good AND easy dinner recipes that everyone in the family will enjoy are hard to come by. That’s just a fact of life. When I tested this pasta with veggies and “sausage” recipe I did not expect to have it twice in one week!
This is made with fake sausage. I keep kosher so therefore, you will never find recipes that require pork, bacon, or real sausage. You can make this with whatever works for your family. The beyond meat brand is a favorite in our household, so that’s what I went with for this pasta with veggies and “sausage” recipe.
I am currently making dinners that require little to no attention and that’s because we got a puppy! I don’t have time to make dinner that takes more than 15 minutes right now because I’m cleaning up pee all day. That said, It’s incredible how delicious my dinners have been despite them being simple. Take-out has come in handy too:) Just being honest:)
As always this recipe can be followed to the tee or it can be used for inspiration. If you don’t like kale go ahead and use any other green like spinach or collard greens.
You will notice from the pictures that this isn’t the kind of pasta that’s swimming in creamy white sauce. I’m just not that kinda girl. I always go light on the cream because I don’t like when my pasta is drenched in white sauce specifically. If you do like it more creamy add more cream and more cheese of your choice.

INGREDIENTS FOR PENNE WITH VEGGIES AND SAUSAGE
- 1 tablespoon oil
- one box of penne
- 2-3 shallots
- 3 cloves garlic
- 1 package of Beyond Meat sausage
- 3-4 cups mushrooms
- 2 bunches of kale
- salt and pepper
- 1/4 cup heavy cream
- 1 cup grated parmesan or mozzarella
- (optional) Top with jalapeno cheddar jack or more parmesan
PROCESS
- Cook your penne according to the package, While the penne is cooking you are going to get everything else together. In a heavy bottom pot or a skillet, heat up a tablespoon of oil.
- Add the shallots and garlic and stir for about 1-2 min getting some color on them.
- Then go ahead and add the “sausage” stirring for about 3-5 minutes getting it nice and browned. Seaon this well with salt and pepper.
- Once the sausage is browned, Add in the mushrooms stirring for another minute.Then toss in the kale and give everything a good mix. season again with saly and pepper.
- Add your cream, parmesan, or mozzarella, and once everything is mixed add the cooked penne.
- Top with jalapenjo cheddar jack or more parmesan.
- I ate this with pan fried ciabatta. Perfection.
